if you want to impress the family or just eat something that isn’t frozen pizza, This recipe is quick, easy, and definitely worth it!
Ingredients:
For the Spicy Salmon Bites:
- 1 lb salmon fillet, cut into bite-sized pieces 🐟
- 2 tbsp soy sauce 🥢
- 1 tbsp sriracha or hot sauce 🌶️
- 1 tbsp sesame oil 🌿
- 1 tbsp honey 🍯
- 1 clove garlic, minced 🧄
- 1/2 tsp ginger, grated 🌱
- Salt & pepper to taste 🧂
For the Rice:
- 1 cup jasmine or brown rice 🍚
- 1 1/2 cups water or chicken broth 💧
- 1/2 tsp salt 🧂
For the Bowl Toppings:
- 1 avocado, sliced 🥑
- 1 cup cucumber, diced 🥒
- 1/2 cup shredded carrots 🥕
- 1/2 cup edamame (optional) 🫘
- 1/4 cup green onions, sliced 🧅
- 1 tbsp sesame seeds (for garnish) 🌿
For the Spicy Mayo Drizzle:
- 1/4 cup mayonnaise 🥄
- 1 tbsp sriracha 🌶️
- 1 tsp lime juice 🍋
Instructions:
1️⃣ Marinate the Salmon
In a bowl, mix soy sauce, sriracha, sesame oil, honey, garlic, and ginger. Toss the salmon bites to coat and let them marinate for 15-20 minutes.
2️⃣ Cook the Rice
Nothing fancy here. I use a rice coked.
3️⃣ Prepare the Spicy Mayo
In a small bowl, mix mayo, sriracha, and lime juice. Adjust sriracha to your spice level. 🌶️
4️⃣ Cook the Salmon
Heat a skillet over medium heat. Add the marinated salmon bites and cook for 2-3 minutes per side until golden and cooked through.
5️⃣ Assemble the Bowl
Divide the rice into bowls. Top with salmon, avocado, cucumber, carrots, edamame, and green onions.
6️⃣ Finish with the Spicy Mayo and Sesame Seeds
Drizzle spicy mayo over the top and sprinkle with sesame seeds for that final touch. 🌿
