Super Healthy, Super Bowl Recipes !

Superbowl Sunday is coming up and we’re right in the middle of one of the biggest transformation challenges we’ve ever had at Aspire Fitness.

We wanted to do our best to help our members be able to enjoy the game, but still feel like they were staying on track with their goals.

Here’s a list that Aspire Fitness Coach, Dori Kershner, put together that still taste great, AND save you a ton of calories.

Baked Onion Rings

 

 

 

 

 

 

 

 

Ingredients
Nonstick cooking spray
1 Bag Baked Potato chips
½ teaspoon cayenne (optional)
½ teaspoon cumin (optional)
1 cup lowfat buttermilk
1/2 cup plus 2 tablespoons all-purpose flour
1 teaspoon salt
½ teaspoon fresh ground black pepper
1 to 2 large Vidalia onions, peeled

Instructions
Preheat the oven to 450 degrees F. Spray a baking sheet slightly with oil and
set aside. Place
potato chips in a food processor and process into 
crumbs, about 20 seconds. Transfer to a
shallow bowl, add cayenne, and set 
aside. In another bowl, combine 
buttermilk, 2
tablespoons of flour, salt and pepper and set aside. Slice onions into 1/2-inch circles and
separate into rings, keeping only large, whole rings (reserve rest of onions for other uses). You
should come out with about 12 to 14 rings.
Place the remaining flour in a sealable plastic bag, then add onions, and shake to coat. Dip
onions 1 at a time into the buttermilk mixture, then dip into potato chip crumbs and place on
oiled baking sheet. Bake for 20 minutes, or until coating is crisp. Season with salt, to taste, and
serve immediately.

Cauliflower Pizza Bites

 

 

 

 

 

Ingredients
16 oz of riced cauliflower
3 eggs
1 teaspoon onion powder
1 teaspoon garlic powder
1 tablespoon chopped basil
1 tablespoon Italian seasonings
1/2 teaspoon red pepper flakes (optional)
Salt/pepper to taste
8 oz cooked ground tukey
½ package of defrosted frozen spinach (squeeze out excess water)
2-3 oz shredded mozzarella cheese
Marinara sauce

Instructions
Preheat oven to 400° F.
Combine cauliflower, eggs, spices, turkey and spinach and mix well in a bowl.
Grease a muffin tin with olive oil spray
Fill the muffin tins with mixture
Bake for 25-30 minutes or until the tops are just turning golden brown. Remove from oven,
sprinkle the mozzarella over the muffins and replace in oven for 5 more minutes to melt
cheese.
Serve with your favorite marinara sauce.
Alternate serving suggestion: Sub taco seasoning for Italian seasoning, cheddar for mozzarella
and serve with salsa for a Mexican cauliflower bites!

Buffalo Cauliflower

 

 

 

 

 

 

 

 

 

Ingredients
1 head of cauliflower, washed, trimmed and broken into florets
2 teaspoons garlic powder
1 tablespoon butter, melted
¾ cup Frank’s RedHot hot sauce
1 Tablespoon blue cheese
Salt Pepper to taste

Instructions
Preheat oven to 450.
Spray a baking sheet with oil spray. Set aside.
Mix the garlic powder, melted butter, and hot sauce in a gallon sized Ziploc bag.
Add the cauliflower into the bag and shake well until the cauliflower is fully coated.
Spread on a baking sheet.
Bake for 20 minutes.
Remove from oven, sprinkle blue cheese and salt and pepper to taste.
