Recipe Rebuild: Mac & Cheese Casserole

 

 

This week’s recipe is a healthy makeover to the classic Mac & Cheese casserole.  Simple substitute of some lighter cheeses as well as adding in cauliflower allows you to enjoy a hearty serving of one of America’s favorites, without all the unhealthy associated calories!  Our version has about twice as much protein and half the calories of it’s unhealthy counterpart!
Ingredients:
  • 1 Box of chickpea (or other high protein/high fiber macroni) macaroni
  • 1 lb. Raw cauliflower florets
  • 1 1/4 cup Trader Joe’s Lite 3-cheese Blend Shredded Cheese
  • 1 8 oz. package of light cream cheese, softened
  • 1/2 cup unsweetened original almond milk
  • 1/4 cup almond meal
Recipe: 
Preheat oven to 400 degrees. Boil a pot of salted water and cook pasta according to package directions.  While pasta is cooking, spread cauliflower on a baking sheet lined with parchment paper, add salt/pepper to taste and roast in oven for 25 minutes.
Once pasta is cooked, drain water and combine macaroni, cauliflower, cream cheese, almond milk and 1 cup of shredded cheese.  Stir until cheese is melted and evenly distributed amongst macaroni and cauliflower.  Pour into casserole dish.  Top with remaining 1/4 cup of cheese and almond meal.  Roast under broiler for just a few minutes so that top browns and cheese  melts.
Serve immediately.  Recipe makes 8 servings.
