Recipe Rebuild: Clean Cut Cole Slaw

Our latest recipe dishes up a terrific side perfect for any hot summer day.  Omitting the vinegar saves calories and shelf life!  It’s an easy, tasty way to get up a healthy serving of veggies without any heavy dressing!

This pairs extremely well with grilled proteins and won’t spoil in the summer heat!  Great for tailgates!

Vinegar Slaw:

Ingredients:

2, 10 oz. packages shredded cabbage (I purchase mine at trader joes)

4 Red, Yellow or Orange Peppers, Diced

1 package of persian cucumbers, Chopped (these are the mini cucumbers often found in supermarket–usually about 6 in a pack)

For Dressing:

3/4 Cup White or Apple Cider Vinegar

1/4 Cup Olive Oil

1/2 Teaspoon pepper

1 Teaspoon Sea Salt

3 Tablespoons Sugar (or use equivalent of sugar substitute)

Place all veggies in a bowl

Combine dressing ingredients and mix well.

Toss into salad to coat and refrigerate for at least 2 hours
